I'm kicking myself for not thinking of this sooner. I can bake with my toaster oven! So I tried baking banana bread. Instead of loaf pans I used a 8x8 brownie pan. Made a few adjustments, since the heat source is so close, it started to brown way too fast so I covered it with foil. And strangely, although the middle was done, the sides weren't, so I took it out of the pan and baked it again. And in the end was this banana bread just as good as the ones I make (or used to... boo hoo) in my regular oven! Maybe that frozen bread dough can come out of hibernation...

I went years with only a toaster oven and hot plate!!
I use to bake lots of Christmas cookies in the toaster oven... it just takes lots more time, because you have to do so many batches.
